The history of choux pastry and the birth of filled puffs

The ancestor of the cream puff was a simple ball of dough, fried and then sprinkled with sugar similar to carnival tortelli, but history teaches us that goodness must not be set limits: this is how, together with the choux pastry, the stuffed puff is born and frosted.

First of all let’s say it loud and clear: the cream puff is an Italian dessert!

The choux pastry, in fact, only left for France because Caterina de’Medici moved there in 1533, to be married to Henry of Valois.

The Florentine noblewoman, in fact, brings with her her host of chefs, including Penterelli and Popelini who will invent, improve and, finally, fill the basic dough for the cream puffs.
